My Fishcake and Mango Salsa Recipe

This came out really nice and no fishy taste.

Cakes
White Fish (I used Orange Snapper - 3 fillets) blend until it's like ground meat
1 Red Pepper - diced
1 Red Onion (medium size) - diced
Fresh Pinapple - diced (1/4 cup)
Cilantro - finally diced
2 long beans diced (like green beans)
Garlic - 2 small cloves diced
2 tablespoon oats (like oatmeal)
One lime (squeeze juice into fish)
Salt and Pepper
I added some cayenne pepper as well for some kick, though you can add red curry paste or whatever you would like. Mix all the ingredients in a large bowl until good and mushy.
Make into nice patties and then lightly flour on both sides. Grill in a pan until golden brown on both sides (best if you have a grill pan with the lines in it) then back on 375 for about 15 minutes.

Salsa

One large mango diced
cilantro
two small tomatos diced
one red onion diced
red pepper (bell) diced
one chili pepper (if you want spicy) diced
salt to taste

mix everything together in a bowl. serve on ths side of the cakes or over the top.

These came out better then some cakes I've had in restaurants. Took 30 minutes and is easy to prepare, so give it a try.
